EGG SCRAMBLE
This is something that I've found that I think is absolutely delicious, it's very breakfasty, but I think it can be eaten just about anytime. Plus it's super easy:
* 1.5 cups Egg Beaters
(or 6-7 eggs/egg whites if that's your thing)
* 4 Tbsp Salsa
(look for something with no added sugar/salt, your grocer might have a fresh-made salsa in the deli area that should do nicely)
* 1 can Tuna, drained
(I prefer tuna in water, but that is more of a taste issue in my opinion)
Coat a glass bowl with Pam, and combine eggs and tuna. Stir, then microwave for ~6-8 minutes (adjust for microwave power, and what consistency you like your eggs). Top with salsa and serve.
Prepared as above, it works out to about 380 calories: 75.5g protein, 10g carbs, 1.5g fat.
You could try adding a low-fat cheese or oats (I think someone elsewhere on the site mentioned that). It comes down to what I'm in the mood for, and what I have room for in my diet based on the time of day.
