Protein banana bread recipe I came up with in college.
4 Bananas (ripe almost black)
1/3 cup of ground flax seeds
2/3 cup of uncooked oatmeal
1 2/3 cups of flour
2 eggs beaten ( try to remove a yolk)
1/3 cup of melted low fat margarine
1/3 to ½ cup of splenda (preference)
5-scoops of vanilla whey protein powder
Baking Powder 1 tsp
Instant coffee can be added to the mix for energy and taste. (Caffeine)
Cook for 30-45 min at 350 degrees.
After 30 min, check consistency with a toothpick. There should be little to no residue on the toothpick when pulled out if the bread is done.
