Ingredients:
8 oz. cod filet
1 tablespoon of fresh lemon juice
1 tablespoon olive oil
salt (to taste)
pepper (to taste)
paprika (to taste)
olive oil cooking spray
Directions:
Preheat your oven to 450 degrees F. Place the cod filet on a sprayed baking sheet coat with olive oil and then top with lemon juice. Sprinkle salt, pepper and paprika to taste. Cover and bake in the oven for approximately 20 minutes, then serve. If you desire a crispier filet, uncover it after 15 minutes and bake for another 5 minutes. This recipe goes well with an oven-baked potato*.
