This is so good you guys have to try it!
I got the recipe out of this months Oxygen Magazine, and I know there are a lot of men who don't read that! lol.
2 lbs Chicken Breast cut into 1 inch slices
5 garlic cloves, chopped
2 onions cut into eighths
2 cups chicken broth
2 cups cherry tomatoes cut into fourths
1 tbsp olive oil
2 tbsp curry podwer
2 cups water
1 1/4 cup lentils
Heat oil in a large pot (make sure its large, this makes ALOT) over high heat, add chicken and let brown for 5 min, turn over half way through.
Reduce heat to medium, add garlic and onion and stir, let sit cook for 5 min.
Add curry powder, stir, then add the rest of ingredients. Cover and simmer for 50 min stirring occasionally. Uncover and let sit for 10 min before serving.
I made this for my friends and I last night for ladies night, since the hubbys are away! And they loved it!!
